Trout is not salmon: the difference, and why it matters on paper

Trout and salmon get used interchangeably in conversation and cannot be used interchangeably on a document. The distinction is simple, and getting it wrong is the kind of mistake that surfaces at a border rather than in a meeting.

Two species, related but not the same

Rainbow trout is Oncorhynchus mykiss. Atlantic salmon is Salmo salar. Both are salmonids, which is why the flesh looks similar and why the confusion exists at all, but they are different fish from different farming industries with different sizes, prices and supply chains.

Where "salmon trout" is legitimate

Large rainbow trout is widely and correctly traded as salmon trout, and that name is fine. What is not fine is dropping the qualifier. "Salmon" on its own means Salmo salar to a customs officer, a food authority and a retail buyer, and using it for trout is a misdescription however common it is in casual speech.

What to check on the paperwork

The Latin name should read identically on every document in the set — the offer, the veterinary and health certificates, the packing list and the label. If the commercial invoice says one thing and the certificate says another, the consignment stops moving while somebody works out which is true.

Why suppliers blur it

Salmon commands a higher price and more recognition, so there is a standing temptation to let the name drift upward. A supplier who does that in marketing will eventually do it in documentation, and the buyer is the one standing at the border when it happens.

The comparison that is actually useful

If you are choosing between trout and salmon, compare them as different products rather than grades of one:

• species and Latin name, stated the same way everywhere
• unit size — trout at 2 to 3 kg behaves differently from a 4 to 6 kg salmon
• the farming system and water each comes from
• freight distance and hours from harvest, which usually differ far more than the fish do

Compared that way the decision is straightforward. Compared as though one were a cheaper version of the other, it is not a comparison at all.
